Warm Haricots Verts Relish

6 Ounce Bacon; chopped
1 Cup Julienned red onions
1 Pound Haricots verts; blanched
Salt; to taste
Freshly-ground black pepper; to taste
1 Tablespoon Chopped garlic

In a large saute pan, over medium heat, render the bacon until crispy. Pour
off half of the grease. Add the onions and saute for 2 minutes. Add the
haricots verts. Season with salt and pepper. Saute for 2 minutes. Add the
garlic and continue to cook for 1 minute. Remove from the heat. This recipe
yields 6 to 8 servings.
