Fried Sweet Potato Hashbrowns

1/2 Pound Diced bacon
1 Cup Chopped onions
Salt; to taste
Freshly-ground black pepper; to taste
1 Tablespoon Chopped garlic
2 Pound Sweet potatoes; peeled, grated

In a large skillet, render the bacon until crispy, about 8 minutes. Add the
onions. Season with salt and pepper. Saute the onions until soft, about 2
minutes. Add the garlic and sweet potatoes. Season with salt and pepper.
Saute for about 10 to 15 minutes. Remove from the heat and serve warm. This
recipe yields 8 servings.
