Italian Style Green Beans and Tomatoes

    1 lb fresh green beans
    1/2 cup chopped tomato, seeded
    1 tbsp. capers, rinsed
    1 1/2 tsp. olive oil
    1 medium garlic cloves, minced
    1/8 tsp. salt
    1/2 oz. anchovy filets (1 fillet)

  1. Place green beans in a pot with enough water to cover and bring to a boil over high heat. Lower heat,
      simmer, uncovered until tender, about for 4-6 minutes.

  2. In the meantime, mix the remaining ingredients together in a large serving bowl. When green beans are done,
      add to the tomato mixture, toss to coat, and serve. Makes 4 servings.
