Stuffed Green Peppers
1 lb. extra lean ground beef (5% fat)
3/4 cup fresh chopped onion
4 fresh plum tomatoes, chopped
1 pinch salt and pepper
4 medium green bell peppers
8 oz. no-salt tomato sauce
In a large skillet, brown ground beef and
onion; drain. Add tomatoes, salt and pepper. Preheat oven to
325F. Meanwhile, cut peppers in half lengthwise;
remove seeds. Place, cut-side up, in a sprayed 13x9-inch
baking dish. Fill with meat mixture. Spoon remaining
mixture around peppers. Pour tomato sauce over top.
Add 1/4 cup water to dish. Bake 50 to 60 minutes
or until peppers are tender.
