Slow Cooker Pork and Sauerkraut

    1 (4 pound) pork loin roast
    2 tablespoons vegetable oil
    1 teaspoon caraway seeds
    1 large onion, sliced
    2 apples, peeled and chopped
    2 tablespoons brown sugar
    4 cups sauerkraut with liquid
    1/2 bottle dark beer
    salt and pepper to taste

  Cut pork loin, if necessary, to fit in the slow cooker. Season with
 salt and pepper to taste. Heat oil in a large skillet and brown meat
 on all sides. Place meat in slow cooker.  Return skillet to burner
 and add the sliced onions and caraway seeds. Saute until onions are
 golden. Add apples, brown sugar, and sauerkraut and stir to combine.
 Pour mixture over the roast and add beer.

  Cook on High for 1 hour, then cook on Low for 5 to 6 hours. Serve
 with mashed potatoes and apple sauce.
