QUICK BORDELAISE SAUCE

    2 tablespoons butter
    1/4 teaspoon tarragon
    1 tablespoon lemon juice
    1/4 cup mushrooms, sliced
    1 1/2 tablespoons cornstarch
    1 cup beef broth
    1/4 cup red wine
    black pepper

 1.  Saute mushrooms in butter until golden.

 2.  Blend cornstarch in beef broth and add to mushrooms.

 3.  Bring to a boil, stirring constantly.

 4.  Stir in lemon juice, wine, tarragon and dash of pepper.

5.  Let simmer for 5-10 minutes. Serve over red meats.
