Spicy Red Onion Relish
2 small or 1 large red onion, peeled
1 tomato
3 tablespoons chopped cilantro leaves
1/2 teaspoon hot red pepper flakes, more to taste
Salt and freshly ground black pepper
Juice of 1 lemon
1. Cut onions in half, and slice into thin half-moons.
Place in a bowl.
2. Halve tomato and discard seeds and pulp. Dice tomato
and add to onion.
3. Add cilantro and pepper flakes, and season with salt
and black pepper to taste.
Add lemon juice, and stir well. Allow to macerate at
room temperature for 30 minutes
before serving.
