Cook 2 cups brown sugar and
1 cup milk over medium heat to the soft ball
stage (230 degrees).
Remove from stove and add 1/4 tsp. cream of tartar.
Stir very little to blend
cream of tartar. Set aside to cool to lukewarm.
Do not let get too cold.
Beat until thickens enough to spread on cake.
Work fast when the right
consistency.
