
1. Heat oven to 350F. Season chicken well with salt and
pepper. Mash garlic with flat
side of knife. With fingers, rub chicken well inside
and out with garlic; place garlic and
cilantro in cavity of chicken.
2. Smear hoisin sauce over entire chicken, and add some
to cavity. Place chicken on a
rack in a roasting pan. Bake for 45 minutes, then turn
chicken over, and bake another
45 minutes or until brown, spraying with vegetable spray
every 20 minutes. Let sit for
about 10 minutes before carving.
