Dixie Crossroads' Corn Fritters

    2 cups flour
    2 eggs, beaten
    1 tablespoon baking powder
    1 cup milk
    1/2 teaspoon salt
    1/4 cup (1/2 stick) butter
    4 tablespoons sugar
    1 cup whole corn, drained
    oil for frying

  Sift together flour, baking powder, salt and sugar. Combine eggs,
 milk, and butter; blend well; fold into dry ingredients. Stir in corn.
  Heat deep fryer to 350F. Drop by tablespoonfuls into hot oil; deep
 fry about 5 minutes, or until fritters are golden brown. Sprinkle with
 confectioners' sugar. Serve warm.
